BAKED PORK CHOPS
6 pork chops ½ tsp salt
1 clove garlic, ground pepper, as desired
1 teaspoon caraway seeds, chopped 1 cup white wine, Dry
2 teaspoon Hungarian paprika, 1 cup light cream sour
Use only mild Hungarian paprika. It is available in department stores and specialty shops. Place pork chops in a baking dish. Mix remaining ingredients except sour cream and pour over chops.
Marinate the chops for 2-3 hours in refrigerator. Bake the chops, uncovered, in the marinade in a preheated 325 F. oven for 1 hour or until tender. Add more wine if necessary. Stir sour cream into pan juices and hot, but NOT boiling. Serve chops with sour cream sauce and buttered pasta or meatballs. Yield: 6 servings
SWEDISH MEATBALLS
1 tablespoon olive oil
1 onion minced
1 celery stalk, chopped
2 cloves garlic, minced
3 teaspoons kosher salt
1 teaspoon ground allspice
3 / 4 teaspoon ground nutmeg
2 eggs
1 / 2 cup milk
1 cup dry bread crumbs
2 pounds of meat loaf mix (1 pound lean ground beef, 1 / 2 pounds of ground pork, 1 / 2 pound ground veal or lamb)
1 tablespoon olive oil
1 / 4 cup all-purpose flour
1 teaspoon sugar
black pepper
1 3 / 4 cups light cream
1 cup water

Preheat oven to 350 degrees F. In a medium skillet over medium heat, heat the oil with onion, celery and garlic and cook until vegetables are tender but not browned, about 10 minutes. Add 2 teaspoons salt, pepper and nutmeg. Remove from heat.

In a large bowl, beat eggs, then mix in milk and bread crumbs. Add the meat and cooked vegetables and stir or work with your hands to combine. Form balls 1 inch. Sauté over medium-high, tablespoon olive oil, a few meatballs at a time, removing them when well browned on all sides. Remove all least 2 tablespoons of fat. Whisk the flour, salt 1-teaspoon sugar and a little black pepper.

Cook over medium heat, scraping the bits of gold. Beat light cream and water. Bring to a boil, stirring constantly, until sauce thickens, at least 1 minute. Return meatballs to pan and simmer simmer for 20 minutes.
8 servings.

BORSCHT vegetable soup
2 pounds of meat, soup bone.
2 carrots.
1 medium head of cabbage.
2 medium onions.
6 medium sized potatoes.
2 cups canned tomatoes.
6 whole peppercorns.
1 bay leaf.
Some sprigs of dill.
½ cup beets.
Cover with cold water and bring to a boil.
Allow to simmer until almost tender. Add water if necessary
to keep meat covered. One hour before serving, add chopped
vegetables and spices. Potatoes can be cooked separately
before serving. When ready to serve, remove from heat and
add sour cream

Grandma's Beef Stew and Dumplings "
1 lbs … … … … … … (500 g) … … … … … … … beef stew
3 tablespoons (45 ml) … … … … … … … flour
1 clove garlic
salt and pepper to taste
1 onion , chopped
3 carrots
1 Turnip, diced
1 bay leaf
Cut meat into cubes. Roll in flour and brown in hot oil.
Add the onion and garlic. Add salt and pepper to taste.
Stir until the onion is golden brown. Add enough water to cover
meat. Bring to a boil. Simmer gently for 1 ½ -2 hours.
Add remaining vegetables ½ hour before the stew is served.

YIELD: serves 4-6
Time: 15 minutes preparation, cooking time approx.2

Sift flour. Add baking powder and salt and sift again.
Cut in shortening and add milk. Drop in stew over low heat
gently, taking care to leave a piece of meat or vegetable and

Swiss Apple Pie
2 cups grated apple or
¾ cup sugar
2 eggs
½ tsp. nutmeg
¾ tsp. cinnamon
¼ tsp. salt
1 cup rich milk, scalded
Mix sugar, nutmeg, cinnamon and salt. Beat the eggs lightly and add to sugar mixture. Mix well and add scalded milk or cereal cream. If apples are cut, place them in the pie shell and pour liquid over them. If you are grated, add the liquid and pour all together into unbaked shell. Bake in a hot oven (400F) for 15 minutes, lower heat to 350F and continue bake 35 minutes or until filling is set.

One of my granddaughters vegan practices. (See the last issue, explains exactly what it is vegetarian). She made a move last night and had a taste of it. The surprise, tasted great. Below is the recipe for Banana Shake. Easy to make.

Banana Smoothie (VEGAN)
1 ½ cups soy milk.
6-7 large dates, pitted.
2 frozen bananas
Put into a blender, mix all ingredients until thick and creamy. If you want to use thinner shake ½ cup soy milk more. Makes 2 servings.

Vegan Chocolate Chip Cookies

Ingredients:
2 cups unbleached white flour
2 teaspoons baking powder
1 / 2 teaspoon salt
cinnamon to taste (optional)
1 cup vegan chocolate chips
1 cup organic sugar
1 / 2 cup canola oil or vegetable oil
1 teaspoon vanilla
1 / 4 cup water

Getting There:

Preheat oven to 350.

In a large bowl combine the flour, baking powder, salt and cinnamon. Stir in chocolate chips. Make a well in the center bowl and set aside.

In a medium size bowl mix vegan sugar and oil. Add add vanilla and water. Be sure to mix well. Add the wet to the dry well. Spoon dough onto ungreased baking sheets. Bake for 8-12 minutes.

Take them out and move to wire racks to cool.

Nearly two dozen cookies.

Fresh Fruit Punch
8 oz each of orange juice, pineapple juice, and
grapefruit juice.
1 bottle of ginger ale. Sugar to taste.
Combine the juice with sugar. Stir until the sugar is
dissolved and refrigerate. Add the beer more pieces of ginger
ice before serving.

Acapulco Gold
3 oz pineapple juice.
½ ounce of grapefruit juice concentrate (undiluted) of juice.
1-oz coconut cream.
1-oz of fresh cream.
Stir with a tablespoon of crushed ice and serve in tall glass.
